Latin Dishes Perfect for Weekend Staycations

Staying home on the weekends can be made special simply by preparing some home-cooked food that's good to the taste, says Healthy Latin Eating. To help you whip up some delicious meals, here are some healthy-tasty recipes that you can do, shared to you by All Recipes.

First up, there's the Caribbean-Spiced Roast Chicken, which is a flavorful protein-packed dish that's going to be a family favorite. Pair it with Mayan Couscous, a colorful, nutritious dish that will surely make your weekend a lot better. Looking for a snack? Get on the grill and prepare some grilled Mexican Corn.

Caribbean-Spiced Roast Chicken

Get a small bowl and combine some lime juice, rum and brown sugar. In a separate bowl, mix together some cayenne pepper, clove, cinnamon, ginger, pepper, salt and thyme leaves. Brush a whole chicken with oil, then coat with the spice mixture.

Place chicken in a roasting pan and bake for about 90 minutes. Baste the chicken with the sauce every 20 minutes while it's cooking. Allow to rest for 10 minutes before digging in.

Mayan Couscous

To make this healthy dish, start by combining the couscous, cumin and salt in a large bowl. Stir in some boiling water and seal with plastic wrap. Set aside.

While waiting for the couscous, get a small skillet and cook unpeeled garlic clove over medium-heat until skin has turned golden-brown. Once done, peel and mince.

Stir the minced garlic into the couscous along with some black beans, corn, onion, cilantro, jalapeno pepper, olive oil and lime juice. You can serve this warm or allow it to cool.

Snack time: Mexican Corn on the Cob (Elotes)

This snack is easy to make! Just get some shucked ears of corn, then grill until hot and lightly charred all over, grill time depends on the temperature of the grill.

Roll the cooked ears in melted butter, then spread mayonnaise on them evenly. Sprinkle with grated cotija cheese and serve with a lime wedge.

Variation: a certain Donnae23 says that you can skip the butter part and use the spice named Tajin, which is chili with lime.
