5 Meatless Meals Under 400 Calories for Every Friday of Lent

Lent is a time when Christians observe fasting, prayer, penance and reflection for 40 days leading up to Easter Sunday, the day when Jesus Christ is risen again. Here are some Friday meatless meals under 400 calories that you can prepare for this season:

1.) Baked tofu and buckwheat spring salad

3.) Layered roasted veggie, sweet potato & black bean tortilla pie with homemade enchilada sauce

Make use of vegetarian refried beans for the filling and use vegetables that are available in the kitchen or to your liking. To make it gluten-free, use corn tortillas in this recipe. 4.) Spinach and sun-dried tomato omelet sandwich
