Eggplants can be cooked using a few methods, such as steaming, frying, stewing, grilling, roasting. Here, LH recommends you several health eggplants recipes for lunch or dinner:

1. Eggplant Sandwiches, for a light dinner. Why not?

Sandwiches, who does not like it? it is easy to prepare and you can eat it as a snack or a meal. you just need some ingredients, do some steps, and voila!

Ingredients:

5-8 slices of eggplant, 2 eggs, A half cup of flour, Salt, black pepper and cayenne pepper, 1 pinch of each for taste, 1 teaspoon olive oil, 2 slices cheese, 4 tsp olive oil, 12 thin slices salami, and a cup of dry bread crumbs.

Steps:

  1. Beat eggs in a bowl. Mix flour, salt, and others for taste in another bowl. Prepare another bowl of dry bread crumbs while preheating the oven to 220 degrees C with a baking sheet inside.
  2. Put a slice of eggplant with ¼ slice cheese, 3 slices salamis, again ¼ slice cheese. Place another slice of off eggplant on top. do it to remaining slices of eggplant, cheese, and salami.
  3. Press each sandwich gently and cover it with a seasoned flour. Put it into a beaten egg, then pour it with bread crumbs. Bread the remaining sandwiches and place it on the baking sheet.
  4. Don't forget to spread a teaspoon of olive oil onto the foil, and place the sandwich over there. You can add any topping on the sandwiches, like sesame seeds or cheese. Repeat to all remaining sandwiches.
  5. Bake it in the oven for 10 minutes, do flip until it's browned. And the sandwiches are ready to eat!

2. Grilled eggplant

You can try this recipe for your 'veggie' dinner. It is very easy and only needs a half of hour to prepare it. Here you go:

Ingredients:

2 tbsps reduced fat mayonnaise, 2 tbsp fresh basil, chopped it., 4 slices red onion,  8 thin slices mozzarella cheese,  8 slices whole-grain bread,  8 slices eggplant, 2 tbsps olive oil, divided, ½ tsp salt, 1/3 cup sliced red peppers

How to cook?

1. Preheat the grill to medium.

2. Mix mayonnaise and basil in a bowl. Brush both sides of eggplants with 1 tbsp oil, and sprinkle the salt on each slice. Do the same to one side of bread

3. Grill them all for 6 minutes, turn it over, you can put a cheese as a topping, and grill it until the cheese melted around 5 minutes. Toast the bread for 1-2 minutes on each side.

4. put the slices of eggplant, red peppers together like when you make the sandwich, spread a mayonnaise on a side of bread. Now, serve it.
